Maple Smoked Salmon.
Hot smoked salmon. This Smoked Salmon recipe uses
wood for a great smoked salmon with a maple syrup glaze crust on
· 4 small salmon fillets (about 5 ounces each)
· 1 cup maple syrup
· 1/2 tablespoon coarse salt
· 1 tablespoon butter
· 1 maple SmokePistol cartridge
and HOW TO SMOKE SALMON:
Remove any skin from salmon fillets. Place salmon fillets in
shallow baking dish and pour maple syrup on top. Flip fillets in
dish to coat both sides. Sprinkle each side lightly with salt
then cover and refrigerate for 24 hours.
Start the SmokePistol smoking and place fillets in smoker for about 1 1/2
hours without heat (cold smoke).
Bring smoker to 160 degrees F and continue smoking for 25
minutes. Remove the salmon
from the smoker and place in a buttered skillet on the cook top.
Cook smoked salmon fillets in skillet for about 2 minutes per
side on medium heat. This makes the maple glaze on the surface
of the salmon.
